The thesis examined food, tastes and the eating culture of Shan migrants in Chiang Mai, in order to express their cultural politics through their ethnic food. The data were collected by interviewing Shan migrants and Shan people involved in occupations dealing with raw materials for the ethnic food.
It was found that the ethnic migrants still eat their ethnic food as a remainder of their homeland and of their ethnic identity. Therefore, raw materials for cooking are provided and made available by other ethnic migrants. Besides having a spiritual value, the ethnic food acts as a cultural space for others to experience Shan culture. Consequently, a number of Shan food sellers sell their food on the Walking Street for tourists and foreigners to try what is different from theirs.
