Abstract |
The report examined and analyzed cooking procedures and the preservation of the Black Tai ethnic foods in Bang Rakan District, PhitsanulokProvince. It was found that besides being a necessity for life, the ethnic foods had psychological and disease-preventive functions. Sociologically, the foods reflected the conventional and traditional lifestyle of the ethnic group. As for food preservation, it was found that it is carried out on certain occasions. The methods of preservation included prickling, roasting and sun-drying. |
